Pacific Rim Chicken Burgers

1 egg                                                         

2/3 cup panko  (bread crumbs)                                         

3 tablespoons chopped cilantro            

1 teaspoon Asian hot chile sauce          

1/2 cup bottled teriyaki glaze                   

1 tablespoon vegetable oil                       

6 red lettuce leaves                                                                                                             

1 1/4 pounds ground chicken

2 green onions, thinly sliced

1 clove garlic, minced

1/2 teaspoon salt

4 teaspoons honey

6 buns, split and toasted (omit if desired)

1 cucumber, peeled, seeded, halved & thinly sliced lengthwise

 

 

In a large bowl, beat egg. Add chicken, panko, green onions, cilantro, garlic, chile sauce and salt. Combine gently. With lightly oiled hands, form into 6 patties.

 

In a small bowl, mix teriyaki glaze and honey.

 

In a large, non-stick skillet, over medium heat, place oil. Add burgers and cook, brushing with teriyaki glaze and turning once, about 10 minutes or until cooked thoroughly. 

 

Place burgers on buns and top with lettuce, cucumber and ginger mayonnaise.
